    Vegan Dessert

    I am stoked to share with you my first 100% raw vegan dessert. It is  so good, you probably won’t tell the difference. So what is the fuss with raw foods anyway? Consuming your food raw eating it in it’s original form when it is not chemically alter ed by heat and all the enzymes, photo-nutrients and vitamins are left intact. This advantage gives your body the right nutrition in the proper form to enable it to perform at it’s optimum. Now that you have had a mini biology session let’s get to this awesome vegan dessert! We will be making raw blueberry tarlets.

    Ingredients:

    Crust
    1 cup dates
    1 cup almonds
    1/2 cup walnuts or pecans
    1 tsp cinnamon
    Pinch of salt

    Filling
    2 cups cashews
    1/4 cup coconut oil
    1/4 cup honey
    2 lemons, juiced
    1 tsp vanilla

    Topping
    2 cups blueberries
    Unsweetened coconut flakes for dusting

    Throw the dates, nuts, cinnamon, and salt into your food processor, and mix until a crumb like consistency is reached.  Grab a muffin pan, and grease with a little bit of coconut oil, which will keep the tartlets from sticking when you take them out later.  Press the nut and date mixture into the pan to form a crust, and place in the freezer to set while you make the filling.
    Next you’re going to grind up the cashews in your food processor or high speed blender until a flour like consistency is reached.  Add in the honey, along with 1 or 2 tbsp of water, the lemon juice, and coconut oil – blending until smooth, creamy, and white.  Take your crusts out of the freezer, and spread the fillin g on top of it using a spatula.  Let the filling set for about an hour or two in the freezer, before arranging a layer of blueberries on top. Dust with the coconut flakes. And there you have it, a raw vegan dessert that will leave you yearning for more.
